Arabian Chicken Khabsa
A fragrant Middle Eastern rice dish made with chicken, basmati rice, and warm spices — simple but very flavorful.
Ingredients:
For chicken and rice:

1 kg chicken (cut into pieces)

3 cups basmati rice (washed and soaked for 20 minutes)

2 onions (chopped)
-
2 tomatoes (chopped)
-
1 tbsp garlic paste
-
1 tbsp ginger paste
Spices:
-
2 cinnamon sticks
-
4 cardamom pods
-
4–5 cloves
-
2 bay leaves
-
1 tsp cumin powder
-
1 tsp coriander powder
-
½ tsp black pepper
-
½ tsp turmeric
-
Salt to taste
Other ingredients:
-
2 tbsp tomato paste
-
3 tbsp oil or ghee
-
Raisins and nuts (for garnish)

5 cups water
Instructions:
-
Heat oil or ghee in a large pot and fry the onions until golden.

Add ginger and garlic paste, then add the chicken pieces.
-
Add all the spices, chopped tomatoes, and tomato paste. Cook for about 8–10 minutes.

Pour in water and cook until the chicken becomes tender.
-
Add the soaked rice, cover, and cook on medium heat until the rice is done and the water dries up.

Garnish with raisins and nuts before serving.
