
Ingredients:
8 ounces dried rice noodles
¼ cup oyster sauce
¼ cup soy sauce
1 tablespoon fish sauce
1 tablespoon maple syrup
1 teaspoon white sugar
2 tablespoons cold water
2 tablespoons vegetable oil
1 teaspoon sesame oil
1 cup shallots, thinly sliced
6 teaspoons bird’s eye chilies, thinly sliced
4 cloves garlic, minced
1 pound skinless, boneless chicken thighs, cut into strips
1 pound Chinese broccoli, sliced (optional)
4 scallions, thinly sliced
1 cup fresh Thai basil leaves
Instructions:
1. Soak the Noodles
Place the rice noodles in a bowl and cover with hot water. Soak for 10–15 minutes until soft and flexible. Stir occasionally to separate them. Drain and keep covered with a damp paper towel.
2. Prepare the Sauce
In a small bowl, mix oyster sauce, soy sauce, fish sauce, maple syrup, sugar, and water. Stir well and set aside.
3. Cook the Aromatics
Heat vegetable oil and sesame oil in a wok or large pan over medium-high heat. Add shallots, chilies, and garlic. Stir-fry for about 2 minutes until softened and fragrant.
4. Cook the Chicken
Push the aromatics to the side of the pan and add the chicken strips. Sear for about 1 minute, then mix everything together and cook until the chicken is nearly done.
5. Add Vegetables
Add the Chinese broccoli stems first and stir-fry for about 2 minutes until tender. Then add the leaves and cook until wilted.
6. Add Sauce
Pour in the prepared sauce and add sliced scallions. Stir and let the sauce simmer briefly.
7. Combine with Noodles
Add the soaked rice noodles. Toss everything together until the noodles absorb the sauce and are fully cooked, about 2 minutes. Remove from heat.
8. Finish and Serve
Stir in fresh Thai basil leaves until wilted. Taste and adjust seasoning if needed. Serve hot and enjoy.
Tips:
You can use other proteins like beef, pork, or shrimp. Slice thinly for quick cooking.
Adjust the spice level by increasing or reducing chilies.
Fresh Thai basil gives the most authentic flavor, but regular basil works as well.
If using different noodles, adjust soaking and cooking time accordingly.
